I am a big believer in keeping a well stocked pantry and for this recipe I always have these ingredients on hand; it makes life simpler to be well stocked (if you know what I mean). Today I am writing about Spaghetti Puttanesca is a gutsy sauce thats easy and full of flavor. So you can have a dinner with an attitude in 10 minutes.

Spaghetti Puttanesca:
serves 4

4 medium garlic cloves minced or pressed
1 pound spaghetti
2 tb. olive oil
1 t. red pepper flakes
1 ( 28 ounce ) can diced tomatoes
3 tb. capers, rinsed
1/2 cup black olives such as Kalamata (pitted and cut in half)

Heat oil, garlic, red pepper flakes in a large skillet over medium heat until fragrant. Stir in tomatoes and simmer until slightly thicken about 8 minutes.
Stir in capers, olives and parsley into sauce. Pour over pasta and toss.

Time to put my apron on and into my kitchen I go. . .
